Delicious and Easy Mexican Side Dishes

I love making Mexican side dishes to jazz up a meal!!  They liven up a burrito, burrito bowl or taco.  I love making a big pot of Mexican style beans and having them for breakfast, lunch or dinner with these sides, either served with sourdough or brown rice.   Each recipe is very simple, although it does take time to make all of them, trust me, it’s worth it!  The inspiration for these recipes comes from a Donna Hay magazine I brought years ago.

Salsa Cruda (8 serves)

500g cherry tomatoes halved

1 shallot chopped

2 tablespoon lime juice

2 tablespoon olive oil

2 cloves garlic, crushed

1 chilli, chopped – leave out if you don’t like spicy food

Sea salt to season

Place all the ingredients in a bowl and stir to mix.  Set aside for 10mins for the flavours to develop.

Salsa verde (makes 1 cup)

2 green chillies, chopped – leave out or reduce the amount if you don’t like spicy food

1 clove garlic

2 shallots, chopped

a handful of coriander leaves

a handful of mint leaves

2 tablespoon olive oil

Place all ingredients in a food processor/blender/thermomix and process until combined.  This is great smeared on or stirred through pretty much anything.

Guacamole (makes 2 cups)

2 avocados

1 chilli, seeds removed, finely chopped

2 tablespoon lime juice

Handful coriander

1 clove garlic, crushed

Salt and pepper to taste

Place all ingredients in a bowl and mix and smush until well combined.  I highly recommend stirring a big spoonful of chipotle sauce into your guacamole, so delicious!

Quick pickled onions (makes 2 cups)

2 red onions, thinly sliced

2 tablespoon vinegar – white wine or apple cider are good options

1 tablespoon olive oil

Salt to taste

Place all ingredients in a ceramic bowl (do not use a metal bowl) and mix.  Allow to stand for at least 10mins before using.

Char-grilled chillies or capsicum (1 chilli per person, 1 capsicum does several people)

Rub oil on the whole chilli or capsicum and grill on a char-grill pan or BBQ until nice and blackened.
